Healthy Food: Cheesy Baked Skillet Pasta



This is something that is quick and easy for those that do not have time on their hands or for those that do not know how to cook. Either way, I would recommend this delish dish.

I have the recipe for this Cheesy Baked Skillet Pasta

Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutes
Serving Size: 6-8
Ingredients
  • 1 pound gemelli pasta or other short cut pasta
  • 1 tablespoon olive oil
  • 2 large cloves garlic, minced
  • 1 (28 ounce) can san marzano whole peeled tomatoes
  • 1 teaspoon dried basil
  • 2 teaspoon dried parsley

  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper
  • 1/2 cup of marinara sauce, plus more if desired
  • pinch of salt
  • pinch of pepper
  • 1 1/2 cups shredded gouda cheese
  • 1 cup shredded fresh mozzarella cheese
  • 1/2 cup fresh grated parmesan cheese, plus more for serving
  • fresh basil, for serving
Instructions
  1. Cook gemelli according to directions on package. Drain and set aside. Preheat broiler.
  2. Heat olive oil in a large skillet. Saute garlic over medium high heat for 1-2 minutes, stirring so the garlic doesn’t burn. Add tomatoes, dried basil, parsley, oregano and crushed red pepper. Season with salt and pepper. Begin to break up the tomatoes using the back of a wooden spoon and simmer for 5-10 minutes or until mixture thickens slightly.Continue to break up the tomatoes as you stir. Add the marinara and 1/4 cup parmesan cheese. Remove from heat and add to the pasta, toss well. Add more marinara sauce if you like more sauce. If your skillet is not oven safe transfer to a baking dish.
  3. Top with the shredded gouda and mozzarella cheese and place under broiler for 5-8 minutes or until cheese is melted and bubbly. Sprinkle with fresh basil and serve with parmesan cheese if desired.

Healthy Hair: Embracing Your Natural Uniqueness

                                                              Start them early!

I just want to take a quick moment to talk about something that is very important and dear to my heart...black people's natural hair. More specifically, those that are in the workforce that are getting discriminated solely by their hair, not their work ethics and our little kids that are attending schools and being told and forced to change their natural hair.

Honestly, I'm tired of hearing all of these stories. 

Why is that, you ask?

Because for once we as a black body are coming in terms to finding out who we are and are appreciating our uniqueness. Why do we out of ALL people need to change our hair? Next thing you know, they are going to force us to change our skin tone simply because they don't like it or shall I say, can't be like us. Yes, I said it. People hate who we are, yet try to be us. If anyone has noticed, they are taking pills to become who we are. I say, black queen, black princess, black king, and black prince continue to represent who YOU are and do not worry about what others say. They can tell you to cut your hair. They can fire you because you don't "fit" into their white ideals, but always remember THEY CANNOT TAKE WHAT'S WITHIN YOU! THEY CAN TAKE YOUR BODY, BUT CAN NEVER HAVE YOUR SOUL!

Healthy Foods- Our dinner



Yum! What are you thankful for?

For me, I am thankful for this wonderful family that I am in. Although everyday may not seem wonderful to me or to my partner, but we make things work. The best thing about this relationship is having someone that can throw down in the kitchen! I never knew that I would end up with someone that can cook, but I'm thankful that he is in my life and he can really cook. I can cook, however, I do not think that I am as good as he is. He made this delicious dish (pictured above) and it was DIVINE!

A extra plus is that we both made the decision to stop eating meat so that means meatless dinners. It was a very easy transition and it's great to have someone to share this with so that I'm not alone with this transition. Although our families do not understand what we are doing with being vegetarians, we will not let what they do not like stop us for doing something that we love to do. One question that I was asked by my grandmother was "So, what are you going to eat for Thanksgiving since it's coming up?" Well, one we don't celebrate Thanksgiving. Please read up on the real story behind Thanksgiving and you will understand if you do not already know the truth behind this "holiday". But on this day since we will be with family, we will eat similar things as we used to eat, but we are more focused 1 with staying healthy and 2 not including meat in our dish. I understand that there are people out there that are vegans and vegetarians that still have Thanksgiving dinner, but they make it work to suit them. I just believe that it is a personal preference, but hey, that's me.

What are your thoughts on going meatless for this upcoming holiday? If you've used to eat meat (or any animal), but you do not eat meat (animal) anymore, how did your family take it when you let them know that you stopped eating meat (animal)?

Healthy Hair: A mini collage of my hair since last year

Healthy Hair: Operation waist length hair

Back in October, I wrote a post on growing out my hair to waist length in one year. I just wanted to update you all with the inches that I'm currently at. As of today, I am at 10 inches. I was at 8 inches back in October. That means that I have 6 more inches to go to reach waist length (and please remember that I'm measuring from the nape of my head...not my hairline). I am happy with my growth and I know that I can achieve another 6 inches by summer/fall time of next year.

So far my hair has been growing 1 inch per month which is excellent. I believe the IM and my other practices have been helping it grow that much in one month. I am standing in faith that my arm pit length hair will reach waist length by the end of next year. :-)

Healthy Hair: BSL hair challenge 2013






So to make sure that I am staying on track with taking proper care of my hair, I have decided that these three dates will be my length check dates (August 31 is the last day of this challenge):

February 28
May 31
August 31

During this time, I will take photos of my length in whatever style that I am wearing at the time that actually shows my length. I just took some pictures of how my hair looks now. My hair has shrunken even in these braids, but I'm not worried about it because I already have a picture showing my length that I just took last week. *shrugs* With natural curly and kinky hair, shrinkage is something that we cannot run from which can be both a good and bad thing depending on the person. I used to want my hair to show it's length at all times, but I thought about it one day and I was like who really cares? I would love to shock people instead of having to stress myself out everyday to straighten it to show that I have hair on top of my head.

So for me, I say no to absolute shrinkage just to prove that I have hair. I rather stretch my hair so that I am not having so many tangles and SSKs. That's what I'm aiming for because Lord knows that if I wear my hair in it's shrunken state that I would be off better by cutting it because detangling it will be a complete nightmare (trust me, I've done it plenty of times thinking that I could still wear it like that as it has gotten longer). I now know that as my hair grow, certain things will have to change to accommodate that new length because I don't want anymore setbacks. As for right now, I am looking to grow out my hair in a proper state which is healthy. I have posted a picture of what my hair looks like now. I just did these braids a couple of days ago and I plan on keeping them in until New Years because I am going to wear my hair out at that time.

2013 Healthy Hair Challenge

So I've been thinking especially after the success of growing my hair out to APL in the matter of months during the hair challenge that I was previously in. At the beginning of the challenge in August, I was just at shoulder length and now it's November and I am at APL. I did some research online and saw that usually in 9 months from APL, that is when you can hit BSL. Then I thought to myself, "How about I do a hair challenge from December 2013 to August 2014?" If anyone wants to join, then I would be happy that you are joining this challenge! :)

I am just proud of myself and I am happy to share this experience with anyone. My next goal is BSL by August 2014 and I believe that I can do it. If you have a goal that you would like to reach by August 2014, then I am here to tell you that you can definitely do it too!

So here is the breakdown of the challenge:

- Wear hear in a protective (or low manipulation) style for 3 weeks and then wear if free for 1 week.
- DC (deep condition) hair every week or every two weeks.
- Do the IM (inversion method) for 1 week each month. You simply have to put some oil on your scalp everyday, massage it in, and tilt your head over for 4 minutes. Please read my post on this method prior to doing this since some people cannot do this technique. Also, do the GHE (green house effect) at least 3 times during this week.
- L.O.C. (liquid, oil, cream) Method hair when needed to keep hair moisturized and sealed.
- Wash and condition hair on your regular wash days.
- Handle your hair gently.

That is all. It really is easy and it will get easier as the days go on. Since it is winter time now, I strongly suggest keeping a silk or satin scarf on when outdoors because this will help to keep the moisture in. Other than that, I will post pictures of my progress and document this journey.

Healthy Body: Staying in shape

It's already November and I still can't believe it! My baby girl is growing older and stronger day by day and I am approaching another birthday and losing this baby weight so all is good. I'm not going to lie, I haven't been really exercising per-say, but I have been cleaning up around the place and doing silly dances with my baby so would you consider that as exercising? I do. I say that because I've been feeling my belly tightening up again. I would say that after giving birth, I was so excited to lose my stomach, but now I am more concerned about toning up and staying healthy. Since I breastfeed, I can't do too much, but I do stay active throughout the day. Sometimes, I need a little motivation (as do many others) so as the days go by, I will continue to stay active and motivate others. Once I finish breastfeeding, however, I will start doing more target exercises. I just wanted to give a little update on how everything is going.

Healthy Food: Sweet Potato & Rosemary Gratin Recipe

Sweet Potato and Rosemary Gratin
Serves 6 to 8
Ingredients:
2 sweet potatoes, peeled and sliced into 1/8” rounds
1 cup buttermilk
3 garlic cloves, minced and divided
1 tablespoon minced rosemary
1/2 cup freshly grated parmesan, plus more for topping
salt and pepper to taste
garnish:
1/2 teaspoon minced rosemary
1. Preheat oven to 375˚F. Line a round 8” cake pan with parchment paper and set aside.
2. Place sweet potatoes, buttermilk and 1 clove of minced garlic into a large mixing bowl and toss together. Allow mixture to sit for 30 minutes.
3. Line the bottom of the cake pan with a single layer of potato rounds. Some overlapping is okay.
4. Sprinkle the top with some garlic, rosemary and parmesan. Season with salt and pepper and continue layering gratin until all ingredients have been used.
5. Tightly cover with foil and bake for 25 to 30 minutes or until fork tender. Remove foil and invert onto an oven safe dish. Sprinkle top with parmesan.
6. Turn oven onto broil and return gratin back to oven. Broil for 2 to 3 minutes or until cheese is bubbling and top has crisped up.
7. Allow gratin to cool slightly before slicing and serving.

Sometimes, I need a little motivation to get up and work out. I know that I'm not the only one either so today I am going to be to giving a little motivation to others (and myself). It's not much, but if you can do a little workout in the morning, that will be great! 

Here is a cardio/strength workout that you can do early in the morning. Doing 2 reps of each won't take too much of your time either. :)

Healthy Hair: The Black Hair Information challenge is officially over!

For the past 3 months, I have been apart of a hair challenge on blackhairinformation.com and today I am going to write my review on everything. First off, this was my very first hair challenge that I have been apart of. I have tried to challenge myself, but never found luck with it. Surprisingly, I found that my hair did grow in those short times where I wore protective styles. When I saw this post, I immediately thought that it was right up my alley. The whole concept of the challenge was that we all were supposed to keep our hair in any protective style that we liked for 3 weeks and then for the 4th week, we could take it down and wear it out. I loved it because I could change up my look. At the beginning of my challenge, my hair stretched out to shoulder length from the nape. Today, we stretched it out in the same area and guess what? My hair grew 3 1/4 inches! My hair is 3/4 inches away from APL so I am happy about that! :) I finally found a style that I love and if you've guessed the bun, you are absolutely correct!

Recently, I made a post about the Mega Bun that I did to my hair and I absolutely LOVED it! But this time around, instead of heat stretching my hair like I usually do to keep it stretched, I put little box braids in my hair. Of course, it may not look like a pro did my braids, but I worked with what I could (yes, I did my own braids and no, I am not a good braider, but it was free and could be done on my own time). I call this my Protected Protective Style because I can wear my bun and keep those ends protected, but I could also keep my hair protected that was at first out and brushed down onto my head.

Now, before anyone gets confused, I simply braided my hair and then I put them in a mini bun. After doing so, I do my mega bun which takes less than 5 mins to do and then I am done. I can slip on a scarf and headband like usual, but none of my hair is actually out with this style which I love. I want to keep these in until January 2, 2014 so I can see how well I retained my length so this means ANOTHER HAIR CHALLENGE! :) This time, it will be a more personal challenge. I will update every week until the challenge is complete and I will take a photo once it is over. My goal during this time is BSL or close to it. I believe that I can do it!

Since I have these braids in, this cuts my hair regimen down. I love making my regimen as simple as possible. So here it is:

Mondays: shampoo, deep condition, bun (when leaving the house)
Everyday: moisturize, seal
3 Weeks: inversion method
3 Months: re-braid hair

See! It's very simple and I know that I can keep this up. I am excited that this challenge has been such a great success and I believe that if I keep doing this, that my hair will thrive.

Video: 9 Months of Growing Natural Healthy Hair



Here, I celebrated 9 months of growing my hair out. I am going to start making more videos soon because seeing this really showed me that my hair is growing. Sometimes, you need some proof whether it be a video or pictures because it really can seem as if your hair really isn't growing when in reality, it is. I found out that I was pregnant after this video so I stopped making videos, but now that I have my little one, there is no reason for me to not make a video (unless, you know, baby girl is crying or something lol).

My Mega Bun

Hi! So after watching that video that I posted last week, I was too excited and I wanted to try it out....SO I DID JUST THAT :)



Next to my hair cut (that I wore for a few years because it was so hot!) This is my second favorite style. It was so easy to do. It literally look 4 mins to do and I've been wearing it for a week now. All I do at night is tie my hair down with my silk scarf and I put my bonnet over my bun. I sleep on a silk pillow which also helps if the scarf doesn't seem to stay on. Also, what helps me out is putting oil down on my hair and flatting my hair (I don't use combs nor brushes when it's like this) and placing my scarf on for some extra hold.
I am telling you, this style is fabulous and if you could see it close up, I am sure that you will love it too. Try this out and just enjoy rocking your updo! :)

Video: The Mega Bun & The Saturn Bun | Special Occasion Updos on Natural Hair



I absolutely LOVE the first bun (both buns are fabulous), but I am going to do the first bun on my hair (as my go to bun). I am going to do bunning for 1 year to see how much hair I can retain since I don't have the time to get braids at my own leisure, which is perfectly fine. Also, this will help me to protect my ends and most importantly, KEEP MY HANDS OUT OF MY HAIR. I am going to try bunning because they are so easy to do and so pretty. My bun is like hers, which is why I am going to incorporate the hair on top of my bun so let's see how it goes.

Healthy Hair- Growing My Hair to Waist Length in ONE YEAR

I am very positive that I can grow my hair to waist length in 1 year! You say whaaaaaaaaa? *side eye*

Yes! You heard me correctly!

Every month, I will post a picture of my hair growth. On me, waist length is 16 inches. I am currently at 8 inches so that means that I only have 8 inches to go and grow! I know some people may not believe me or may be skeptical, but I believe in speaking things into existence! I am going to CONTINUE to take better care of my hair! I am going to CONTINUE to take better care of my body! I strongly believe that your words can be spoken into existence! This is why I urge people to watch what they say to others, to children, and most importantly to themselves. I USED to be a negative person, but I have changed myself and it all begins with changing your MIND! I truly thank God for getting me to this point in life and also for giving me the strength, positive people in my life, and affirmations to continue this lifelong journey.

I want to encourage everyone to set goals, but I want you to also ACHIEVE them and don't listen to the haters/naysayers. I believe in you, but most importantly, YOU have to believe that YOU can do it!
